Hi Harry, thanks for writing.

I'm not sure I can help but maybe some of the
Forum members can assist you in your search.

To find that type of dough recipes, I would search in
some of the great pizza books featured on this page.
Of particular note is Peter Reinhart's:
American Pie: My Search for the Perfect Pizza

You can see a video review as well as links to
The Holy Trinity Plus One of Pizza Books.

I think I have found it.

Harry's New York Tough/Chewy/Crispy Pizza Dough Recipe

1 teaspoon of honey
2 teaspoons of dry yeast
1 tablespoon of sea salt
1/2 c of warm water
2 tablespoons of olive oil
combine and proof
add
6 c flour
21/2 c of warm water
add flour when kneading, knead for 20 minutes

I tried this recipe and it is pretty good.
