Simple red sauce, for one pizza:

1 small can (8 oz) tomato puree
1 small can (6 oz) tomato paste
Fresh garlic cloves - two or more, to your taste
Fresh oregano - a handful of leaves
Fresh basil - four leaves or so
1/4 cup red wine, such as Carlo Rossi Paisano

You can put the wine, herbs and garlic into a measuring cup and spin them up with one of those hand-held blenders, or put all the ingredients into a regular blender and spin them up that way.

If you use dried herbs, a tablespoon of oregano and half tablespoon of basil would be a good starting point. Same with garlic powder (not garlic salt). Play with the proportions to get the taste you want.

The wine takes the edge off the tomato while making the sauce very rich tasting.

I make this in large quantities and put it in sandwich bags and freeze them for later. In my area, large cans of puree are easier to find. You can use tomato "sauce" but it has added salt and spices. I prefer the puree.

Hope this helps. Experiment & enjoy!

How much is the wine? I don't know about your part of the country, but here in Florida, a 3 liter jug is under 10 bucks for the Carlo Rossi Paisano, a good, fundamental red wine. In fact, I am sipping that as I type. Just don't dump it on your keyboard..... not good, not good.
