A Pepe's Clam Pizza

That is a great question...

If I knew the answer, I would open my own pizzeria!


But after having watched them make Pizza at Pepe's many times, it seems that they are using a whole milk mozzaarella. most pizza chains use a part-skim milk mozzarella.

I think they use a specialty brand of aged parmesan...

that's my opinion.
I would love to here anyone else's opinion....
