When it comes to sauce, I have found that what you prefer is what is best!

I make a red sauce, and I make a "white" sauce, that I have posted here. It's a matter of taste and preference. I have become very fond of the white, that includes no meat - and I LOVE Italian sausage on my pizza. I might experiment with a white sauce that includes meat. I do most of my pizzas on the charcoal grill - it has that certain flavor to it that I have come to love.

Acutally in Italy, those pasty readymade "Pizza sauce" out of a jar is practically unknown.
They just use crushed tomatoes, then sprinkle preferred herb/spice mixture upon it. It works and gives a fresher taste, just be careful, especially if you are making a thin crust pizza, not to overload the tomatoes, as it can easily get soggy!!
Also equally popular here is variations of "pizza bianca", which means not with white sauce but no sauce added, just brushed with evoo and herb/spices plus your choice of toppings.
However, if you just simply say "pizza bianca", you will get a baked pizza dough with nothing on it, well, maybe a brush of evoo and sprinkle of salt and rosemary. Actually it makes a nice snack this way, or also you can slice it up in half and make a tasty sandwich, or panino.
