For the last several months, I have been working on an important project.

Legends of Pizza, http://www.pizzatherapy.com/legends.htm has been my way of engaging the pizzaiolo, who works in front of the oven.

For Legends of Pizza, Volume 1, I interviewed Peter Reinhart (American Pie), Gary Bimonte, (Pepe's, New Haven Connecticut) and Chris Bianco (Pizzeria Bianco, Phoenix, Arizona).

Albert, I'll leave it to you to decide whom else to interview..... I'm a novice at this!

Maybe you could get those "pizza purists" - I'm willing to learn!

Papa Don,

I agree, LoP1 is a great listen. The interviews with Peter, Gary and Chris reveal their histories and passions about pizza. They all have amazing stories to share, and their passion for pizza runs very deep.

The ironic thing is that these guys would not describe themselves as "Legends of Pizza." They see themselves as humble craftsmen pouring their hearts and souls into a continuing quest to master the creation of simple food. They are in the business to nourish their customers' bodies and souls. Listening to the CD elevates the simple pizza to nearly sacred status.

On "Pizza Night" I take a listen for inspiration a few hours before I hit the kitchen.

Brian,

I've been out of town since you joined the board, but I am honored by your reply.

Your responses on the dough threads pretty much boil down to, "keep it simple, experiment to see what works for you, trust your tastes and be patient (loooong fermentation)."

This is the type of reply I would expect from a "Legend of Pizza." It's not necessarily a dough recipe that we all need, its skill and experience. And there are two ways to gain them. One is the same way you get to Carnegie Hall - Practice, practice, practice.

The second method is to learn by listening to your mentors. Albert's "Legends of Pizza" CD is the way for amateurs (like me) to gain knowledge and guidance on our quest for pizza nirvana. I look forward to LoP, Volume 2, and hope your name will be featured.

Your sage advice, your humility, and your priorities (as listed on your site's vacation page) further validates including you on the list for LoP2.

I have learned so much from reading the various posts.

To have Brian Spangler here is an honor indeed.

Thanks so much for your positive feed back about Legends of Pizza, Volume 1.

I am working on Volume 2. It is taking way more time than I thought...

I will tell you this: Legends of Pizza, Volume 2 is in the works.
And the Legends of Pizza who I have interviewed are on your list!
(Not all of them, but some of them...)

(How did you know that? There is only one person who really knows and that's me: and I'm not talking!)

More on Legends of Pizza Volume 2, as it develops.

In the meantime, please check out Legends of Pizza, Volume 1.
This CD has really gotten rave reviews.
This would make a great gift!
